There is no BT_I2S_DI signal or pin on my Sterling-LWB module. Does that mean I can only send I2S data and not receive it?

No. BT_I2S_DI is shared by BT_PCM_IN depending on the Bluetooth Audio configuration. However, please be aware that this configuration is untested by Ezurio.
